Puff Pastry Pizza Rolls

Yesterday I tried a cool recipe I saw on Instagram for wrapping apples in puff pastry (it turned out great) and I had a third of the pastry package left in the fridge. So today I made pizza rolls with it and they turned out amazing too! (I guess the secret is in the puff pastry which is simply delicious. Too bad it’s not great for my diet…). I made them in various sizes – some in mini cupcake tins and some in larger cupcake tins. The small ones come out just bite-sized and they fit perfectly on my plates. The girls really loved them (in all sizes). Their preparation is very simple and requires only 4 ingredients.

Ingredients

  • 1 sheet frozen puff pastry, defrosted
  • Tomato paste
  • Oregano/thyme
  • Yellow cheese (such as cheddar or mozzarella)
  1. Preheat the oven to 180°C (350°F).
  2. Spread the puff pastry on a clean work surface and roll it out slightly so it’s not too thick.
  3. Spread tomato paste on it using a spoon or spatula and sprinkle a little oregano or thyme.
  4. Sprinkle grated cheese over the paste. I cut slices of cheese into small pieces because I didn’t have grated cheese. It worked well too.
  5. Roll up the pastry and cut into pieces about 3 cm (1.2 inches) thick.
  6. If you want to make tiny rolls, don’t roll up all the pastry at once. Do one and a half rolls of the pastry and cut it from the rest of the dough. Essentially, you’re creating thin “tubes” of dough and cutting them about 2 cm (0.8 inches) thick. Make sure to do one and a half rolls so that a roll forms that won’t open up.
  7. Place the rolls in a cupcake tin which helps them keep their shape and put in the oven for 20-25 minutes until they get a nice color.
Arrange the pizza rolls and vegetables on a game plate and enjoy a meal with the kids.
