Crackers with Tuna and Vegetables

Another fun variation from bread slices is crackers! There are so many types of crackers these days – healthier and less healthy, with seeds, with herbs, with vegetables in the mixture, and just plain ones. Not to mention the millions of homemade recipes… The crunchiness delights the kids (maybe that’s one of the secrets of snacks…?) and you can put anything on them.

Ingredients

  • Crackers of your choice
  • Tuna
  • Mayonnaise
  • Carrot
  • Red bell pepper
  • White cheese  such as low-fat cottage cheese or Greek yogurt (or any other spread that kids would enjoy dipping their vegetables in)
  1. Prepare tuna salad by mixing tuna with mayonnaise. I prepare it with low-calorie mayonnaise. You can add corn or pickles. Spread the tuna on the crackers.
  2. Peel the carrot and cut into circles or sticks. Cut the red bell pepper into sticks.
Arrange the crackers, vegetables, and a spoonful of white cheese on a game plate and enjoy a meal with the kids.
